1 | medium onion, chopped | ||

1 | clove | garlic, chopped | |

1/2 | green pepper, chopped | ||

1/2 | lb. | fully cooked kielbasa, sliced into 2 inch pieces | |

3 | large tomatoes, chopped | ||

1 | cup | chicken broth | |
|
|||
1/2 | teaspoon | salt | |
|
|||
1/2 | teaspoon | Cajun seasoning | |
|
|||
1-1/2 | cups | instant rice, uncooked | |
|
Spray large skillet with cooking spray. Heat to medium high. Cover and cook onion, garlic and green pepper for 3-5 minutes. Stir in kielbasa, tomatoes, broth, salt and Cajun seasoning. Heat to boiling.
Add rice and stir. Heat to boiling; reduce heat to low. Cook 8-12 minutes or until rice is tender. Fluff with fork before serving.
