1/2 | cup | chopped onion | |

|||
1/2 | cup | chopped poblano pepper | |
|
|||
1/2 | cup | chopped red bell pepper | |
|
|||
1 | fresh jalapeno pepper, sliced | ||

1 | can | (15 ounce) Essential Everyday Seasoned Black Beans, slightly drained | |
|
|||
1 | package | Essential Everyday Yellow Corn Round Tortilla Chips | |
|
|||
1 | jar | Monterey Jack salsa con queso, warmed | |
|
|||
3 | cups | Essential Everyday Shredded Monterey Jack Cheese | |

|||

chopped fresh cilantro | |||
|
In large skillet over medium-high heat, combine sausage, onion and peppers; cook and crumbled until sausage is no longer pink and crispy browned. Drain off grease. Stir in beans; cook until heated through.
Place chips on two large baking sheets. Top with con queso, bean mixture and shredded cheese.
Bake in a preheated 400 degree F oven until cheese is melted and bubbly (about 10 minutes). Garnish with tomatoes and cilantro.
