1/4 | cup | Essential Everyday brown sugar | |

1 | teaspoon | Essential Everyday ground cinnamon | |

1/2 | teaspoon | Essential Everyday ground nutmeg | |

1/4 | teaspoon | ground ginger | |

1/8 | teaspoon | ground cloves | |

1 | egg, beaten (for egg wash) | ||

Preheat oven to 375 degrees F. Line a baking sheet with parchment paper.
In a bowl, mix together the pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, and cloves.
Unroll the pie crusts on a flat surface and roll out slightly thinner. Using the pumpkin-shaped cookie cutter, cut out pumpkin shapes from the crust. You should be able to get 6-8 pumpkin shapes from each crust.
Cut slits in half of the pumpkin cutouts - these will be for the top of the pie.
Place half of the pumpkin cutouts on the prepared baking sheet. Spoon a small amount of the pumpkin mixture into the center of each cutout, leaving a border around the edge. Then, place the second cutout on top of the filling. Use a fork to crimp the edges.
Brush the top of each hand pie with egg wash and sprinkle with some coarse sugar.
Bake for 15-20 minutes, until the pies are golden brown.
