1 | English cucumber, cut lengthwise into quarters and sliced into 1/2 inch pieces | ||

4 | cups | watermelon, cut into 1/2 inch cubes | |

|||
1/4 | teaspoon | coarse salt | |
|
|||
1/4 | cup | chopped green onions | |
|
|||
4 | ounces | crumbled feta cheese | |
|
|||
2 | tablespoons | fresh lemon juice | |
|
|||
1 | tablespoon | olive oil | |
|
|||
1/4 | teaspoon | coarsely ground black pepper | |
|
Place cucumber and watermelon in a large bowl and sprinkle with coarse salt. Stir in green onion.
In a small bowl, stir together feta cheese, lemon juice, oil and pepper; add to cucumber watermelon mixture and stir gently.
Sprinkle with extra pepper if desired.
