| 1 | jar | (2 oz.) roasted red peppers, drained and chopped | |

| 1 | teaspoon | garlic, minced | |

| Salt to taste | |||

| Pepper to taste | |||

| 1/2 | teaspoon | olive oil | |
|  | |||
| 2 | tablespoons | lime juice | |
|  | |||
| 1/2 | cup | onion, diced | |
|  | |||
| 1/2 | cup | green chilies, diced | |
|  | |||
| 1/2 | cup | parsley, finely chopped | |
|  | |||
In a bowl, combine peppers, garlic, salt, pepper, olive oil and lime juice. Add onions, chilies and parsley; mix well. Cover and refrigerate at least 4 hours before serving to blend flavors. Serve with tortilla chips.
