1/2 | cup | chopped red bell pepper | |

2 | cups | cooked and chopped corned beef | |

In large skillet, heat oil over medium heat. Add onions and peppers; salt and pepper to taste. Saute until onions are softened (about 3-5 minutes).
Add in potato rounds and corned beef. Saute, slightly breaking up potato rounds, until cooked through and desired doneness is reached.
Serve with fried eggs, if desired.
