with Garlic-Lemon Aioli

6 | large fresh artichokes, rinsed well | ||

1/2 | cup | Essential Everyday Real Mayonnaise | |

2 | tablespoons | fresh squeezed lemon juice | |

3 | tablespoons | Essential Everyday 100% Pure Olive Oil, divided | |

1 | teaspoon | lemon zest | |
|
|||
1 | teaspoon | minced garlic | |
|
In large stockpot, bring 8 cups water to a boil. Cut 1/2 inch of the top off artichokes and cut stem flush with bottom. Trim tips of leaves with scissors to remove thorns.
Cut lemon in half; squeeze into boiling water and add rinds to water. Carefully place artichokes in water; cover. Gently boil 20 minutes or until tender. Remove artichokes from water and drain well. Let cool.
In small bowl, combine mayonnaise, lemon juice, 2 tablespoons oil, lemon zest and garlic; refrigerate until ready to serve.
Prepare grill to medium heat. When artichokes are cooled, cut in half; using a spoon, scrape out the fuzzy heart and discard. Lightly brush both sides of artichoke with remaining oil; salt and pepper to taste.
Place artichokes on grill; grill, turning occasionally, until lightly browned (about 1-2 minutes per side).
Serve grilled artichokes with garlic-lemon aioli.
